Hi, this one is sold http://www.americanartifacts.com/smma/advert/az397.htm
but I thought it worth a link as it's an interesting bit of kit and may give you a couple of idears.

Does anyone suppose a Modern one would work?
a pedal powered belt grinder ? Would you be able to provide enough power? at least you would have it variable speed

Eco-friendly, good for your health, use it to keep the kids quite if you're feeling tired. "Shut up Billy and get pedalling. Daddy wants to get this knife finished."
Sounds great.
