OK. I'm really getting into this sharpening thing with my Lansky and am now getting fairly reasonable results.
However, there is one thing I can't work out.
Can someone explain to me why when sharpening some knives I can shave arm hairs on one arm, but turning the blade over and trying the other arm, the edge won't shave? I thought I was not sharpening each side with the same number of passes with the hone, but counting them each side makes no difference?
Is this just an effect of using the Lansky, or should the edge shave no matter which side of the edge you use?
